Recipe: VEGAN PATTIES


Hey there! We were thinking about the introduction, but decided that stories about lost love, inspiration and life goals are not for us (you know, the stories that you usually use for your first post). So we are opening thing blog with a simple recipe for the first vegan dish that we actually tried to make more than 3 times, just to make it right, so we could share the recipe with you all.

We wanted to make something that could replace a steak, chicken, fish or whatever we used to have for lunch before we were vegan. We are not really fans of artificial meat and cheese and that stuff that a lot of vegans love and eat all the time. Nah, we are more the "stick to fruits and vegetables" kind of vegans. The inspiration for this recipe was brought to us by the (don't really know why) famous Jamie Oliver, but we changed his recipe a bit and made it (much :P) better. And here it is, our first, opening, recipe.

Quantity: 4-6 patties, depending on the size and thickness.

Ingredients:
140 g chickpeas
140 g sweet corn
1 onion
3 tbsp plain flour
Bunch of parsley
Turmeric
Cayenne pepper
Pinch of salt
1/4 Lemon
Olive oil

Method:
First chop the onion and sauté it until brown. Place it into food processor (or a blender or you can use a stick blender) with drained chickpeas and sweet corn, chopped parsley, spices, salt and lemon juice. Pulse it until it gets combined. Don’t mix it for too long, because a bit of texture should retain. Start adding the flour, spoon by spoon, take a fork and mix it well.
Take a big plate, put a piece of baking paper on it and dust it with flour a bit. Take a bit more flour and a spoon, scoop out the mixture and make the patties. They should be about 1 cm thick and about 10 cm wide. Place the plate with patties in the fridge for half and hour.
Heat up a bit of olive oil in a large frying pan over a medium heat. Once the oil is hot, fry the patties until brown and then turn them around and wait until they’re brown on the other side as well.

The patties go great with spinach. Or other vegetables. Also with rice. Or in a bun, topped with some BBQ sauce or ketchup. Yum!
